It’s now I Santi’s turn, our IGT wine with the Garganega grapes that contain the minerali of the hilly morainic terrain. Today we recommend it with lobster linguine.

- 350 gm linguine pasta
- 2 lobsters of 400 gm
- 1 garlic clove
- 300 gm cherry tomatoes
- white wine as necessary
- 1 sprig of parsley
- Garda DOP extra virgin olive oil to taste
- salt and pepper to taste
Wash and finely chop the parsley then wash and cut the tomatoes in half. Divide the lobsters lengthwise and crush the claws with a meat mallet.
Brown the lobster in a pan with the garlic and some olive oil on the pulp side of the lobster, wet with white wine and let it evaporate. Add the tomatoes, then add some salt and pepper and cook for 10 minutes.
Cook the linguine in salted water then drain it and dress it with the tomatoes and parsley. Place the dressed linguine on a plate and then put the lobster on top.
