Pasta and broad beans recipe is a really tasty dish that can’t be missed especially during the Spring season. The beans are rich in proteins and vegetable fibre and go well with bacon, pecorino and ricotta cheese and aromatic herbs such as mint.
Today we are going to show you our traditional recipe using fresh broad beans and sweet bacon. Great when tasted together with a glass of our Nini new 2015 vintage red wine: made from Corvina and Corvinone grapes, “ripassato” over the marcs of IGT San Fermo.
- 400 gm of short pasta
- 500 gm peeled broad beans
- 4 tablespoons of extra virgin olive oil
- 1 litre of vegetable broth
- 1 onion
- 100 gm of sweet bacon
- salt and pepper to taste
To prepare the pasta with broad beans, the fresh part of this pulse: open the pod and shell the bean with your hands.
Cut the bacon into cubes and cook it over a low heat in a non-tick pan until it is golden and the fat has melted. Add the chopped onion and extra virgin olive oil and then pour in the broad beans with a pinch of salt, some pepper and a couple of ladlefuls of broth.
Cook over low heat with the lid on for 20 to 25 minutes checking from time to time and adding, when necessary, the rest of the broth. When the beans are cooked, turn off the heat and start on the pasta: the ideal type of pasta would be the short type but you can also opt for spaghetti or homemade orecchiette.
Drain the pasta cooked “al dente” and put it in the pan with the broad beans, keep aside a little bit of water so that you can add it to make it more soupy if your prefer. Season with a tablespoon of olive oil and sprinkle some Parmesan cheese on it.
If you prefer a light and vegetarian version, replace the bacon with peas.
In order to save time, you can cook the beans the day before and keep them in the fridge or freeze and use them later.
Serve your guests a tasty plate of pasta with broad beans together with a glass of Nini, a full-bodied red wine with a hint of black cherries and ripe fruits.
